Cookies with a Twist

Recipe

2 1/4 cups whole wheat flour (or flour of you choice)
1 teaspoon baking soda
1 teaspoon salt
1 cup  avocado (or butter, softened)
3/4 cup Stevia (or organic granulated sugar)
3/4 cup packed organic brown sugar
1 teaspoon vanilla extract
2 large organic eggs
1 (12 ounce) package Semi-Sweet Chocolate Morsels
1 cup of coconut

PREHEAT oven to 375 degrees F.

Combine flour, baking soda and salt in small bowl.  Cube the avocado and add it to a food processor with the vanilla extract and 2 eggs, process until smooth. In a separate bowl add the avocado mixture, granulated sugar, brown sugar and mix in a large mixer bowl until creamy. Gradually beat in flour mixture. Stir in morsels.  Take the batter and roll in into individual golf ball sized cookies and place on a greased baking sheet.

BAKE for 18 minutes or until golden brown. Cool on  for 2 minutes; remove to wire racks to cool completely.

  1. For all of you reading this, these are super YUMMY cookies!! I love cookies and Rachel made these for me for Christmas last year and after I bit into one I had to go around and share with everyone else and make sure to tell them that they had avocado in them.. They were all surprised and agreed that they were delish!! Thanks for posting Rachel so I can now make them for myself!! :-D
