ESPYs Award Dinner for Two!

Hello Everyone!  I apologize for my absence!  June and July have been two crazy busy months!….Bridal Shower, Bachelorette Party, Wedding, etc. and July isn’t over yet and its still packed!

 

I thought an awards dinner would be a perfect night to join y’all again!  Last night was the ESPYs and I  wanted to make something out of the ordinary and special for my husband!  He loves sports and he was excited to watch the ESPYs with me, because he knows I like the red carpet! We all know that I prefer to see what all the stars and athletes are wearing and he cares about their performance and the awards they receive!  Nevertheless, we enjoyed watching the award show together and we also enjoyed the ESPYs Award Dinner I made for just the two of us!  The ESPYs was awesome!  The jokes were hilarious and of course the athletes that were honored did a truly amazing job this season! At the beginning of the show Seth Meyers, was dishing out many jokes, and my favorite one of the whole night was when he said, “The ESPYs are where sports and entertainment meet.  Like a Kardashian sister’s bedroom.” (camera pan to Reggie Bush).  Haha! Hilarious! I couldn’t stop laughing!

Onto dinner…..The ESPYs Award Dinner consisted of baked asparagus, and yellow peppers stuffed with ground chicken, onions, garlic, quinoa, tomatoes, and topped with smoked Gouda cheese.

First, bring 1 1/2  cups of  salted water to a boil.  Once the water starts to bubble add 1 cup of quinoa, turn the heat down and simmer with the lid on until quinoa has fully absorbed all the water.   Next, take two yellow peppers, slice the tops off and reserve the pepper top, clean and seed the pepper with a small paring knife.  In a separate skillet, add EVOO and ground chicken, season with lemon pepper, garlic powder, and dill weed.  While the chicken is on low,  chop a sweet onion, a clove of garlic, two vine ripe tomatoes and set aside.  Once chicken is cooked pour onto a plate and set aside.  Add more EVOO to the skillet and cook the onions and garlic until caramelized.  In a separate bowl mix ground chicken, garlic, onions, and tomatoes.

Take a tablespoon and  shovel the ground chicken mixture into each pepper.  Grate smoked Gouda cheese on top of each pepper.  Bake at 375 F for 15 minutes.  On a separate baking sheet evenly spread the asparagus (enough for 2).  Drizzle EVOO over the asparagus salt and pepper, and grate fresh parmigiano reggiano, place in the oven with the stuffed peppers.  Once the stuffed peppers and asparagus cook for 15 mins. remove the peppers add more smoked Gouda cheese and turn your broiler on high. Place back in oven to caramelize the cheese, should take 3 to 5 mins.

Recipe:
Stuffed Yellow Peppers
2 yellow bell peppers
4T EVOO (extra virgin olive oil)
1/2 cup of grated Smoked Gouda Cheese

8oz of ground chicken
Season chicken with…
1 tsp of lemon pepper
1 tsp garlic powder
1 tsp of salt

Cube/dice the following…
2 small vine ripe tomatoes
1 small onion
1 clove of garlic

For Quinoa…
1 tsp salt
1 1/2 cups of water
1 cup of Quinoa
Add 1T of organic butter for rich creaminess

Asparagus (Dinner Side)
1 bunch of asparagus (enough for 2 people)
1T of EVOO
1/4 cup of grated parmigiano reggiano
1 tsp of salt
1 tsp of freshly grate black pepper
