As a kid I loved ice cream sandwiches, didn’t you? I remember during the hotter months of the school year, after school my mom would take me to a Water and Ice store to get ice cream. I think ice cream is one of those desserts most everyone loves and it is definitely many peoples guilty pleasure. The other week we had a BBQ and we had 12 kids at our house, so I thought I would channel one of my inner childhood desserts and make homemade ice cream sandwiches. I would have made the cookies from scratch, but I was so busy that day I didn’t have time. I bought a healthier store brand of pre-made cookie dough, one container of chocolate chip and one container of sugar cookie.
Ingredients:
12 chocolate chip cookies (I made extra)
12 sugar cookies (I made extra)
Vanilla ice cream
Red Sprinkles
Recipe:
Bake the cookies for about 12 minutes and then remove them from the oven and place them on wire racks, to cool. Let the cookies cool for about 30 to 45 minutes. Once the cookies cool take the softened vanilla ice cream and scoop one scoop on 12 cookies. Then take the other 12 cookies and place them on top, slightly pressing the ice cream between the two cookies. Take your choice of sprinkles, I used red, and douse the sides of the ice cream with sprinkles. (Warning: when doing this many ice cream sandwiches only do 3 at a time then place in them in the freezer and repeat. The ice cream can get too soft and then you will have a melting mess, believe me!)
