Chicken and Soba Noodle Stir Fry

Oh my gosh this was so yummy and incredibly easy!  I was so excited to use all the fresh ingredients I had just bought from the store that I wanted to use them all and I thought a stir fry would be the perfect way to incorporate my large basket of mushrooms, asparagus and sugar snap peas, soba noodles, and organic chicken.  I love stir fry’s, don’t you?  The recipe like I said is easy it is the preparation that can be time consuming…cleaning each mushroom with a damp cloth or paper towel ( it’s better to wipe them down because mushrooms are like sponges and will absorb the water if you rinse them), rinsing and cutting the asparagus in 1 inch pieces, and rinsing the sugar snap peas. I bought soba noodles that you cook for a couple minutes in hot water, they came in a square and I cut the square into fourths. This recipe is so easy and makes eating healthy easy too!

Recipe:
1 Bag of Soba Noodles
2 large chicken breast cubed
1 Cup of Sugar Snap Peas
1 Cup of mushrooms (use your mushroom of choice) dice into thin slices
2 Cups of 1 inch slice of asparagus
2 tbsp of EVOO
Salt and Pepper to taste
and any of your favorite spices

In a large skillet drizzle 1 tablespoon of EVOO cook the chicken breast cubes (salt and pepper the chicken breast) on all sides.  Once the cubes of chicken have cooked – remove from skillet and add the 2nd tablespoon of EVOO.  Add to the skillet the mushrooms, asparagus and sugar snap peas.  cook for about 3 minutes on high.  Then add the Soba noodles and seasoning of your choice.  I used Garlic powder, salt and pepper, and about 1 teaspoon of the seasoning packet that came with my soba noodles.  Once the soba noodles have cooked with the veggies for about 3 mins add the chicken back into the skillet.  Cook for another 5 minutes on medium heat.  Be sure to scrape the bits off the bottom of the pan to get all the flavors to meld with the veggies and chicken. Be sure to season to your taste! You could always add a couple teaspoons of a low sodium soy sauce or stir fry sauce too!
